When you go to Cheesemans Fright Farm, visit the upstairs shop. They have caramel apples. Caramel apples are kind of nostalgic for me. It’s not like I would eat them because my mom wouldn’t let me, but just seeing them set the ‘fall’ vibe for me.
Now that I’m 16, and I make my own money, if I really wanted to I could buy myself one, but I have braces. It really is such a shame. So I decided to find a recipe that mixes my favorite dessert, cheesecake, with caramel apples in a way that I can eat it.
CARAMEL APPLE CHEESECAKE BARS RECIPE:
Crust:
- 2 cups all-purpose flour
- 1/2 cup firmly packed brown sugar
- 1 cup butter, softened
Cheesecake Filling:
- 3 (8 ounce) packages softened cream cheese
- 3/4 cup sugar
- 3 large eggs
- 1 1/2 teaspoons vanilla extract
Apples:
- 3 Granny Smith apples, peeled, cored and finely chopped, (about 3 cups)
- 2 tablespoons sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
Streusel Topping:
- 1 cup firmly packed brown sugar
- 1 cup all-purpose flour
- 1/2 cup quick cooking oats
- 1/2 cup butter, softened
Drizzle:
- 1/2 cup caramel topping for drizzling after baked

This recipe was just delicious and was absolutely devoured by my family and friends. I am one for very simple recipes, and this one has a lot of deep instructions, so I would say don’t start something you don’t want to finish. However, I will say that it’s good to do a couple complicated things in life, so maybe let this be one of them. If you do and decide it was a mistake, I believe it will be a very scrumptious mistake.
