Last year, I used to bring in various cookies all of the time to share with the rest of The SIREN staff. One recipe I made multiple times and got many compliments for was pumpkin cheesecake cookies. I was going to make this column about that but I figured I would do it with a twist. One of my favorite things about fall is apple cider, or in specific, apple cider donuts.
Here are the ingredients you’ll need (with an Elena spin):
- 2 cups of apple cider- (you’ll need to reduce it in a pot)
- Philadelphia – No Bake cheesecake filling.
- 1 and ¾ cups of flour
- 2 and ½ tsp of cinnamon
- ½ tsp of nutmeg
- 1/4 tsp ground allspice
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup (168 g) unsalted butter, softened
- 3/4 cup (165 g) light brown sugar, packed
- 1/4 cup (50 g) granulated white sugar
- 2 egg yolks, at room temperature
- 2 tsp vanilla
- 2 tbsp (30 ml) apple cider reduction from above

I would explain each step but since there are a lot, I’ll spare you the extra reading, and I’m sure the original author of this recipe could do it more justice. But I will say, these cookies turned out to be the best fall treat I’ve had in a long time. I am a total cheesecake girl, and the mixture of the spiced sugar and the apple cider just made me a sucker for them.
This recipe was actually a little more complicated than the recipes I usually do. Most of the time I gravitate towards simple and easy recipes but I wanted to be a little bit more ambitious. To be honest though, I did make it a little simpler by using pre-made cheesecake filling. But with the fact that you have to make an apple cider reduction, and make the dough the right consistency so you can fold the cheesecake into it, it still contains a little bit of intricacy. Though it might take some more effort than most cookies, I’d say it’s 100 percent worth the try.
